Jonny Spielsinger

Originally from New York, Jonny has been in the Seattle restaurant scene for over 9 years and has
worked every position in the Front of House from Bar Back to General Manager. Back in 2011, he started bartending at Poquitos in Capitol Hill and eventually worked his way into a co-bar management position where he created and developed cocktails for the menu. In 2012, he won the inaugural Northwest Tequila Festival’s cocktail competition that sent him to Mexico and was featured on celebrity chef Marcus Samuelsson’s online food journal, Food Republic, as “Cocktail of the Week.” After 6 years at Poquitos, he went on to open Zócalo, a large upscale casual Mexican Restaurant in Pioneer Square, as their General Manager. Now, Jonny is currently the Assistant Manager at Tom Douglas’ Cuoco in South Lake Union, where he also oversees the bar program and private dining. He’s been in the Tom Douglas family since October 2018.
