As the executive chef at Norman, the restaurant and all-day café conceptualized by Claus Meyer and Fredrik Berseluis, Chef Stephan Ilnyckyj helms the kitchen with a focus on Scandinavian technique using New York’s best available produce and local ingredients.
Stephan joined the Norman team following stints in some of the most acclaimed kitchens in New York, including Jean-Georges’ Spice Market, where he learned the skills necessary to lead a kitchen team early on in his career. Since then, he has also served as Chef de Partie at Eleven Madison Park, following his time as Chef de Cuisine at Estela and Sous Chef at Betony for three years.
Stephan is a self-taught chef who studied classical piano and computer science at the University of Miami. When he is not in the kitchen at Norman, you can find Stephan fine-tuning his skill set at the piano.
