Edwin started in the restaurant industry at the age of 18 working as a dishwasher at Durgin Park in Boston. He then went on to work at Craigie on Main in Cambridge as a prep cook under famed chef Tony Maws for 2 years. Edwin’s real interest in food came while working at Craigie where he learned important skills and how versatile different types of food can be. After leaving Craigie, Edwin joined Island Creek and 10 Tables, continuing to learn new skills in the kitchen. In 2014, Edwin become a Sous Chef at The Merchant Kitchen and Drinks.
Edwin enjoys playing soccer on his days off and spending time with family and friends. He enjoys making homemade pastas and being able to work with different proteins to create new and interesting dishes.
